Try out this tasty Mediterranean Quinoa salad this weekend! You will need: 1/4 cup uncooked quinoa 1/2 cup black olives, sliced 1/2 cup roasted peppers, sliced 1/2 cup fresh or canned corn kernels 1/4 cup red onion, diced 1/3 cup feta cheese crumbles Dressing ingredients: 1 tbsp olive oil 1 tsp red wine vinegar 1 drop oregano salt, pepper Cook the quinoa and let it cool. While it is cooling whisk all the dressing ingredients together. Once the quinoa has cooled down, mix all the ingredients together, including the dressing. Enjoy
